It's 3:00 in the afternoon, and you get a phone call from your husband. He's invited co-workers over for dinner and you only have a couple hours to prepare.
Have you ever had to entertain in a pinch? What "entertaining staples" do you keep on hand for throwing last minute get togethers?

Appetizers that are quick and easy.....
Meatballs Cheese and crackers Hummus with Pita Chips Brie Round in a Pastry
Quick Dinner Ideas -
the pre-flavored pork tenderloins....throw in the oven and bake and slice them over some spring greens
shrimp over pasta with pesto sauce - you can buy the already cooked and peeled shrimp, boil your pasta, buy the jarred pesto, mix together and add parmesan cheese. you can also add sundried tomatoes, mushrooms or artichoke hearts.
you can go to the seafood market and get some fresh white fish and make a parmesean fish. Broil the fish with lemon juice sprinkled on it. In a small bowl, mix 1/4 cup of soft butter, 3 T. mayo, 1/2 cup of parmesean cheese and a couple dashes tobasco sauce. Once the fish is done, take out and top with cheese mix, broil again until topping is browned.

This happens all the time. I keep frozen shrimp for shrimp cocktail along with ketchup and a really good horseradish for sauce. two or three tkinds of brick cheese, Carr's crackers and a good brand of Queen olives (picked not thrown, I'm an olive snob). He'd never dare bring anyone home for dinner last minute, only cocktails and snacks. If it's dinner they want we'll go out.

DH is a stay at home dad. So unless its me inviting Friends and Family over its not unexpected. When it comes to friends and family I have no issues throwing together some soup and garlic bread. Soup can be made from water is on hand. :)

I always have frozen boneless, skinless chicken breasts, various types of pasta, frozen garlic bread, frozen peas, and several types of cheese.
I can always through a pasta dish together, using a jar sauce (completely doctored to my liking) or make one of my own. I can make a really good appetizer out of frozen green peas and cream cheese. Heat the peas and throw them in a food processor with cream cheese, season with a little pepper and garlic. Makes a great dip for veggies of spread for crackers.
